Crepes with Caramelised Peaches & CRESCENDO Hazelnut Oil


Ingredients for four portions:
175 g self raising flour
125 g butter
½ cup milk
3 eggs
2 fresh peaches
2 tablespoons brown sugar
2-3 teaspoons CRESCENDO Hazelnut Oil
1 pinch salt

Preparation:
Sift flour into bowl mix in milk, salt and eggs to make a smooth batter then set aside for 15 minutes. Make 8 crêpes by spooning 4 tablespoons of batter into frying pan with melted butter and repeat (same process as making pikelets) keep warm in oven. Wash and halve peaches, remove stone and cut into thin pieces. Caramelise half the butter and all the sugar in a frying pan and then roll the peaches in the caramel. Place 2 crêpes and caramelised peaches on each plate and drizzle with hazelnut oil. Serve with vanilla ice cream (drizzled with hazelnut oil).
