Ingredients for 4 portions:
4 beef filets (each 120g)
100ml beef stock
1 teaspoon demi-glace
1 tablespoon CRESCENDO Star Forest Raspberry
1 teaspoon fine cut herbs (sage, thyme, rosemary)
1 tablespoon ice cold butter
Salt, pepper, sugar
CRESCENDO Grape seed oil, cold-pressed
Preparation:
Before starting, the beef filets should be at room temperature.
Seal the beef filets by frying in hot grape seed oil on a strong heat, until they go a golden brown colour. If the pan is oven proof put it directly into a preheated
oven at 100°C, if not place the beef in an oven tray before placing in the oven. The cooking time depends on your own taste. When cooked to taste remove beef from the pan or tray, pour off the fat, add sugar to the remaining juices and caramelize. Add beef stock and simmer to reduce the sauce. Remove from heat and add demi-glace, CRESCENDO Star Forest Raspberry, season to taste and blend with herbs and stir in ice-cold butter. Serve filets and sauce.
